Holdfast Specialty Seafood Co. was founded by chefs Nathan Gould and Tyler Paolini, alongside their longtime friend and business partner Jesse Kim, with a simple idea: bring the craftsmanship and care of fine-dining to a fast-casual seafood experience that feels welcoming, accessible, and built for community.

Rooted in New England’s coastal spirit, Holdfast draws from the team’s backgrounds in some of the region’s most acclaimed kitchens—from O Ya and Sarma to restaurants in Rhode Island and Martha’s Vineyard. Their fanatical devotion to quality, precision, and flavor meets a menu built for everyday enjoyment—featuring raw bar favorites, seasonal crudo, and inventive takes on classic New England rolls like clams, oysters, shrimp, and lobster, each served on a signature brown-buttered bun sourced locally.
